PURPOSE: To prepare an easily utilizable food having delicious taste and preservable for a long period at room temperature, by preparing a food paste containing the meat of cattle, poultry or fish, MISO (fermented bean paste), sugar or sugar alcohol and a solute, filling the paste in a retort pouch, and sterilizing at a high temperature.
CONSTITUTION: A food paste containing (A) 10W40wt% cattle, poultry or fish meat, (B) 15W50wt% MISO and (C) a proper amount of a solute to achieve the water activity of 0.88W0.98, is filled in a retort pouch, sealed, and sterilized at a high temperature. When the amount of the meat is <10wt%, the nutrient and the taste of the product become poor, and when it is >40wt%, the production cost is increased and the viscosity becomes too high. The food may be incorporated further with natural seasonings such as sesame, ginger, starch, dried bonito, etc., artifical seasonings, seasoning liquid such as caramel solution, other seasonings, vegetables, etc.
