Abstract:

PURPOSE: To obtain a meat product producible into marbled beef, excellent in appearance, flavor and sophisticated feel, useful for steak, etc., by incorporating a meat food stock with a composition prepared by mixing a protein and chitosan followed by freezing treatment.

CONSTITUTION: The objective meat product can be obtained by incorporating (A) 100 pts.wt. of a meat food stock such as meat waste with (B) pref. 10-100 pts.wt. of a composition prepared by mixing (1) pt.wt. of a protein such as separated soybean protein with (2) pref 0 1-8 pts.wt. of chitosan under an acidic condition followed by adjusting the pH of the mixture to 5.5-9, and then lyophilizing.
