Abstract:
To allow for automatically determining meat quality with high accuracy without relying on human hands.SOLUTION: A meat quality determination program for determining quality of meat makes a computer perform: an information acquisition step for acquiring analytical information obtained by analyzing one or more of free amino acids, fatty acid composition, oleic acid, inosinic acid, guanylic acid, and vitamin E of target meat; and a determination step for determining quality of the meat using three or more levels of association between meat quality and reference analysis information obtained by preliminarily analyzing one or more of free amino acids, fatty acid composition, oleic acid, inosinic acid, guanylic acid, and vitamin E corresponding to the above analysis information for the meat in the past and on the basis of the reference analysis information corresponding to the analysis information acquired in the above information acquisition step, giving priority to one with a higher level of association.SELECTED DRAWING: Figure 12
