PURPOSE: To obtain the titled food capable of providing products having excellent sense of eating with hardly and shrinkage (within 5%), by treating raw gluten with an acid, reducing the treated gluten, blending the resultant pasty gluten with a meat-containing food raw material and heat-treating the obtained blend.
CONSTITUTION: An acid, such as hydrochloric acid or acetic acid, is added and homogeneously blended with raw gluten (63wt.% moisture content) so as to provide pH2W5 thereof. An alkali is then added to neutralize pH to 6W7 and a reducing agent, such as sodium hydrogensulfite, in an amount of preferably 200W400ppm is added to provide a pasty gluten subjected to the acid/ reduction treatment. The obtained pasty gluten is then added to a meat- containing food raw material and the resultant blend is subsequently heat-treated to afford the aimed food.
