PURPOSE: To provide a mechanism for thermal cooking of a food material capable of carrying out the quicker thermal cooking than that of a mechanism by the prior art and preventing the food material from collapsing and deforming.

CONSTITUTION: This mechanism for thermal cooking of a food material is obtained by installing a mutual separating and joining mechanism for a pair of heating surfaces 1 and 2 and capable of feeding the food material in a state of the separated mutual heating surfaces, closing the mutual heating surfaces in a state of the fed food material, nipping, pressurizing and heating the food material. The closed heating surfaces have a shape corresponding to the outer peripheral shape of the food material to be thermally cooked.
