Abstract:

PURPOSE: To automatically and surely fold croissant dough by bringing croissant dough into contact with a fixing member symmetrically provided to a carrying line to rotate the croissant dough, allowing the center of the dough to coincide with the carrying line, pressing the center of the dough and oscillating the fixing member.
CONSTITUTION: Croissant dough 1 is carried by a forming conveyer 2 and brought into contact with a fixing member consisting of a pair of fixing plates 3 symmetrically provided to a carrying line to rotate the dough and the center of the dough 1 is allowed to coincide with the carrying line and then the center of the dough 1 is pressed by a vertically movable pressing member 4 and the dough 1 is folded by oscillating the fixing member 3. Thereby, the croissant dough 1 is extremely readily subjected to centering to surely fold the dough 1. Furthermore, a pair of opposite endless belts using the inside as a passage of the dough 1 is preferably provided adjacent to the downstream of these pair of fixing plates 3 in the apparatus.
