Abstract:

PURPOSE: To prepare a coffee solution having excellent flavor and proper concentration suitable as a raw material of soluble coffee, in a short time, by the successive treatments of ground coffee in a steeping column, which comprises steaming treatment, spraying with hot water, stirring, and filtering.

CONSTITUTION: A bottom lid 2 of a steeping column 1 is closed, and coarsely ground coffee beans are charged into the column 1 through an inlet hole 5. After closing the inlet lid, the beans are steamed with steam introduced through a circular tube 8 attached to the bottom part of the column 1, while stirring. The temperature of the introduced steam is about 130W160°C. The beans are preheated by introducing steam into a heating jacket 3. After the steaming treatment, the beans are steeped at about 80W85°C with hot water injected through the nozzles 7 of a pipe 11. The coffee solution thus obtained is extracted from an outlet pipe 7, and forced to cool. The coffee grounds are discharged by unlocking the lock 14 and opening the lid 2. The filter 30 has a double structure comprising a flannel cloth stretched on a frame and a stainless steel mesh, to prevent the clogging of the mesh. The coffee solution is concentrated and dried to obtain soluble coffee.
