PURPOSE: To obtain a method and an apparatus for measuring moisture in butter which enable the measuring of moisture in butter on line and moreover, at high accuracy and is free from the effect of difference in the production unit of cream, the changing of operating conditions of a butter making machine and furthermore, the temperature of the butter or the like.
CONSTITUTION: This method and apparatus are for measuring the content of moisture in butter highly accurately. A near-infrared moisture meter which can radiates and receives respective wavelengths of near-infrared rays to be absorbed by moisture and fat in butter and three wavelengths as comparison wavelengths equally affected by disturbance without being absorbed by the moisture and the fat, a displacement sensor 1 to measure a distance from a sensor section of the near infrared moisture meter to the butter and a temperature sensor 5 to measure the temperature of the butter are used to compute the content of moisture from the absorbance of the near-infrared rays corrected by the distance to the surface of the butter from the sensor 1 of the near- infrared moisture meter and the temperature of the butter. Moreover, the results are corrected by a data pertaining to hue of the butter.
