Abstract:
To produce heat-treated eggs with eggshell excellently heat-treated in a short time.
A plurality of raw eggs placed on a heat-resistant tray are transported in a fixed direction by a carrying belt 21. The raw eggs transported in the fixed direction are heat-treated by condensation latent heat of high-temperature water vapor in a heat treatment part 11 to give heated eggs. A carrying belt body 31 is arranged at the subsequent stage of the carrying belt 21 and transports the heat-resistant tray on which the heated eggs are placed in the fixed direction. In a cooling part 12, the heated eggs transported in the fixed direction are sprayed with a cold air jet stream and cooled.
