Abstract:
PROBLEM TO BE SOLVED: To produce a product green tea while keeping the liquid color degree of a leaf color so as to be green.
SOLUTION: Raw tea leaves are subjected to a steaming treatment with steam obtained by heating water containing a divalent-trivalent iron salt of a compound represented by the formula: Fe+2mFe+3nCl2m+3n (wherein, m and n are each a positive integer), and the treated product is subjected to a rolling treatment and a drying treatment to provide the product green tea.
