To provide a method for smoke-drying, capable of reducing a power consumption miniaturizing an apparatus and improving qualities of smoked food by uniformly attaching and permeating a smoke into works.
An inlet 11a and an outlet 11b are formed at both ends of a chamber 11, respectively. A transporting means 12 is inserted into the chamber from the inlet toward the outlet. Plural works 19 can be transported at fixed intervals by the transporting means. A pair of electrode plates 13 are arranged in the longer direction of the transporting means in the chamber so as to lay the works between the plates at fixed intervals from the works. A smoke to be attached/permeated into the works is emitted from a smoke emitting means 16 and introduced into the chamber. A DC or AC voltage of 7 kV to 15 kV is impressed between a pair of the electrode plates by a high-voltage generating circuit and the works are earthed.
