To rapidly remove the natural heat of a carcass and the water on the surface thereof, promote the decrease of the temperature of the carcass after the processing, suppress the addition of microorganisms and improve the freshness by blowing cold air at a high speed onto the surface of the washed carcass in a processing line of the carcass.
Carcass M is treated by blowing cold air previously cleaned by an air-cleaning means such as a high-performance filter 17, at a high speed on the surface of the washed carcass M in a processing line of the carcass M. The treating apparatus of the carcass M is preferably constituted of a cold air-generating means for generating the cold air having a prescribed temperature by installing a cooler such as a cooling unit 7, an air-cleaning means for removing dusts in the cold air generated by the cold air-generating means such as a high-performance filter 17, and a cold air-discharging means for accelerating the air cleaned by the air-cleaning means, and blowing the cold air onto the surface of the hung carcass M, such as cold air-discharging unit 8.
