To provide a method for the vacuum cooling and humidity control of steamed rice, by which the cooling and humidity-control operation of the steamed rice for brewing Sake (Japanese rice wine) can be carried out quantitatively in a short time, and to provide an apparatus therefor.
The apparatus for the vacuum cooling and humidity control of the steamed rice comprises a vacuum vessel for storing and sealing the steamed rice; a vacuum pump 20 for evaporating water content in the steamed rice, by keeping the interior of the vessel at high vacuum and cooling the steamed rice by the latent heat of vaporization; a condenser 14 for returning the vaporized steam to water; a cooling pipe group in the condenser; a cooling water-circulating device 19 for circulating cooling water; an electronic balance 13 for constantly measuring the reduced amount of the water vaporized from the steamed rice; a personal computer for stopping the vacuum pump by setting the water content of the steamed rice as a target value; and an air-introducing device 11 capable of removing various germs.
