Abstract:

PURPOSE: To transfer a beautiful picture pattern to the surface of cheese, by applying molten liquid cheese to a film printed with a picture pattern, and cooling and solidifying the molten hot cheese.

CONSTITUTION: A desired picture pattern is printed to the surface of an ink- impermeable film, e.g. synthetic resin film, cellophane, etc. with an edible ink preferably containing an edible dye having strong dyeability to proteins. The printed film is transferred continuously, and molten liquid cheese is supplied continuously to the printed part of the film. The molten hot cheese is cooled and solidified without moving the cheese relative to the printed pattern to integrate the cheese with the pattern, thereby transferring the pattern to the cheese. As an alternative method, a part of the film free from the cheese is folded to cover both surfaces of the cheese with the film, thereby transferring the pattern to both sides of the cheese.
