Abstract:

To provide a method for preventing proliferation of microorganisms in water for processing and water for transportation which is safe to the human body and is cost effective in food industry.

The water flow used for transporting and processing food is treated with an effective antimicrobial amt. of percarboxylic acid. As the amt. thereof, the oxidation reduction potential(ORP) of the water flow is maintained between about 280 to 460mV with respect to an Ag/AgCl standard electrode. Acetic acid peroxide is usable as the percarboxylic acid.
