This baking device 1 includes a casing 2 having a baking chamber 3 inside, a conveyor 4 for conveying food, a nozzle 5 for spraying superheated steam onto the food in the baking chamber 3, a supply line 51 for supplying the superheated steam onto the nozzle 5, a superheated steam producing part 7 for producing the superheated steam, intakes 61a, 61b for sucking the steam in the baking chamber 3, a return line 64 connected to the intakes 61a, 61b and returning the steam to the superheated steam producing part, and a refilling line 9 connected to the return line 64 for refilling the saturated steam. A refilling amount of the saturated steam by the refilling line 9 is adjusted to a flow rate of 16-17% to a flow rate of the steam returned from the baking chamber 3 by the return line 64, and the mixture steam of the refilled saturated steam and the returned steam is heated in the superheated steam producing part 7 to produce the superheated steam.
