Abstract:
To provide a method for baking Neapolitan type pizza crusts, by which the Neapolitan type pizza crusts can efficiently be produced in a large amount at a low cost, and to provide a device for baking the same.
The method for baking the Neapolitan type pizza crusts, comprising passing the dough loaded on plates 6 through an oven 2 and simultaneously baking the dough, includes a process 9 for spraying overheated steam on the upper surfaces of the dough just after the plates loading the dough are entered in the oven, and/or a process 8 for preheating the plates loading the dough just before the plates loading the dough are entered in the oven, and the device 1 for baking the Neapolitan type pizza crusts is also provided.
