Abstract:

To produce bread comparable to bread obtained by using foreign-grown wheat flour by using wheat flour obtained from wheat produced in Japan according to a conventional method as a raw material.

The bread is produced by using a sponge and dough method. A mixture containing gluten and common salt in wheat flour produced in the country is used as the raw material. One or two or more kinds selected from the group consisting of L-ascorbic acid, a yeast food and a dough improving agent other than the gluten and common salt are made to exist in the sponge and dough. Thereby, dough having good mechanical resistance can be prepared even by using domestic wheat flour. Tasty bread having a soft texture with volume and slow staling can be mass-produced as the product.
