Abstract:

To provide a method for reducing the level of saturated fatty acid in association with a correlation between the level of unsaturated fatty acid in milk and β-casein variants.

A substitute of "low-fat" milk is produced by determining the genotype and/or phenotype of cows on the basis of the amino acid residue located at a position 67 of β-casein produced in their milk in association with the correlation between the ratio of saturated to unsaturated fatty acids in milk and the β-casein variants in milk.
