A charcoal fired cooking appliance 10 has a rectangular parallelepiped frame 11 opened at its upper surface, and a grill roaster 12 detachably installed in an opening of the frame 11. In this case, a porous plate 13 for placing charcoal 14 of a solid fuel is provided at an intermediate stage of the frame 11. Porous nozzles 15 are laterally extended and mounted under the plate 13, gathered to a supply pipe 16, and a heater 17 and a nitrogen gas generator 18 are connected to the pipe 16. Nitrogen gas from the generator 18 is heated by the heater 17, the heated nitrogen gas is supplied from the nozzles 15 into a combustion atmosphere of the charcoal 14, and a partial pressure of the nitrogen gas in the atmosphere is regulated by a controller 19.
