Abstract:

To provide a method for regulating or controlling the chain length distribution of a-1,4-glucose chain of amylopectin of starch produced by a plant, a method for producing a starch having different amylopectin molecule structure, i.e., the chain length distribution and physical properties of the a-1,4-glucose chain and a starch having new structure and physical property and produced by the production method.

The invention relates to a method for producing a starch having different chain length distribution of the α-1,4-glucose chain of amylopectin by using a plant obtained from a plant having incomplete isoamylase activity and transferring an isoamylase coding gene of another kind of plant and a method for regulating or controlling the chain length distribution of the α-1,4-glucose chain of amylopectin. The invention further relates to a new starch having the chain length distribution of the α-1,4-glucose chain of amylopectin and/or the thermal gelatinization property of the starch different from those produced from a wild-type plant by using a plant obtained from a gramineous plant having incomplete isoamylase activity and transferring an isoamylase coding gene of wheat.
