Abstract:
PROBLEM TO BE SOLVED: To finish rice and cereals to a desired moisture in a short time without deteriorating the characteristics of the rice and cereals, because various improvements are tried for the rice and cereals which consist mainly of starchy materials, are extremely sensitive to wind, water and temperature, and occasionally crack to change the taste or the like and cause the deterioration of commercial value, but are still insufficient.
SOLUTION: The method for controlling the moisture of the rice and cereals is characterized by thermally gelatinizing a kneaded mixture of starch with water, drying the product, crushing the dried product to form fine particles, mixing the fine particles with the rice and cereals to bring the rice and cereals into contact with the fine particles, and thereby allowing the starch fine particles to absorb the moisture of the rice and cereals or adversely imparting the moisture of the rice and cereals to the starch fine particles.
