Abstract:

To provide a method and a device which are useful for controlling the temperature of an edible dough, can rapidly and efficiently control the temperature of the dough on the kneading of the edible dough substantially without affecting the surrounding work environment, can continuously be operated for a long period, and can be applied to all kneading machines.

This method for controlling the temperature of an edible dough comprises applying a gas, such as air, having controlled temperature, humidity and gas volume to the edible dough, when the dough is kneaded. Therein, the gas used for controlling the temperature of the dough is preferably preliminarily controlled and maintained at a prescribed temperature and a prescribed humidity, and a gas flow is, if necessary, preferably applied to the dough. The gas is preferably circulated and reused without discharging outside the system. The device for controlling the temperature of the dough has an air conditioner which can applying the gas having controlled temperature, humidity and gas volume to the dough to be kneaded, and the device for kneading the dough comprises the kneading machine and the device for controlling the temperature of the dough.
