Abstract:
PURPOSE: To reduce a triglyceride content in egg yolk and product including egg yolk by diluting egg yolk with water, etc., adding cyclodextrin to form a complex with triglyceride, separating it and separating a desired off amount of diluting liquid such as water to the desired content. CONSTITUTION: Egg yolk is diluted with water or salt solution and added with cyclodextrin (desirably γ-cyclodextrin). A cyclodextrin/triglyceride complex is separated from this mixture by centrifugal separation, etc., and the desired amounts of water and salt solution are separated off each time. Organic solvent is not required for extraction.
