To provide a method of dehydrating a water-containing organic compound requiring no power source, enhancing drive force for permeating moisture through a membrane, and increasing permeation amount (dehydrating amount).
The method of dehydrating a water-containing organic compound dehydrates the water-containing organic compound by a membrane separation means and takes out the concentrated organic compound. In the method, moisture having passed through the membrane in the membrane separation means is absorbed in a moisture-absorbing substance; the moisture-absorbing by the moisture-absorbing substance is performed under conditions of concentration of 40-64 mass%, at 15-50C, and of a circulation ratio (a ratio of the supply amount of the moisture-absorbing substance to the amount of membrane permeating) of 50.
