PURPOSE: To easily prepare a high quality dehydrated article without lowering the quality of foods or medicines, by containing anhydrous glycosyl fructose in a water-containing substance to convert the same to a glycosyl fructose hydrate crystal.
CONSTITUTION: Anhydrous glycosyl fructose is contained in a water-containing substance and converted to a glycosyl fructose hydrate crystal to perform dehydration. As anhydrous glycosyl fructose, one with moisture content of below 3w/w% on the basis of a value according to a Karl-Fiscer's method is pref. and a commercial crystalline anhydrous glycosyl fructose powder can be used and a natural substance such as palatinose, raffinose or erulose can be appropriately selected. The pref. addition amount of anhydrous glycosyl fructose is 0.01W500pts.wt. of 1pt. of the water containing substance.
