PURPOSE: To efficiently desalt a plant extract containing oligosaccharides, by filtering said extract by using an ultrafiltration membrane having a definite range of a fractional MW in a process prior to electrodialysis.
CONSTITUTION: In a process prior to desalting a plant extract by electrodialysis, said extract is filtered by an ultrafiltration membrane with a fractional MW of 1,500W17,500, pref., 2,500W12,500. As a result, a membrane contaminate comprising a substance such as an org. acid, for example, phytic acid or water-soluble polysaccharides being an electrodialysis inhibiting substance can be removed and, therefore, the plant extracted solution can be desalted efficiently. The plant extract containing oligosaccharides, desalted by this method, can be widely utilized in an industrial field according to the kind of oligosaccharides. For example, soybean whey from a soybean extract solution can be converted to a soybean extract (oligosaccharides mixture) wherein the sugar component of a dry solid is at least 80% or more, ash is about 8% or less and oligosaccharides in the sugar component are at least 30% or more.
