Abstract:

PROBLEM TO BE SOLVED: To provide a dispersed state determining method for a dispersed system by sink-and-float of a Cartesian diver of which the density is within a range of ±1.0 g/mL of density [D (g/mL)] in the dispersed system where a dispersoid is dispersed in the closest packing condition, in a gas/liquid dispersed system, and of which the density is within a range of D+1-D+12 g/mL in a liquid/liquid dispersed system.
SOLUTION: The dispersed state determining method of the present invention determines easily and quickly the closest packing condition where excellent eating feeling, stability and the like are provided, or the vicinity thereof, and satisfactory and uniform quality control is provided in manufacture of foods and the like, by using the present invention.
