Abstract:
PURPOSE: To dehydrate vegetable products in the state of maintaining functionability and palatability by placing articles on the shelves in a hermetic room, reducing the pressure in this room, heating the walls of the room, introducing steam therein and heating the articles by separate heaters in a reduced pressure state. CONSTITUTION: The articles are placed on the shelves 4 of the room 1 having a hermetic box body 3 and the pressure in the room is reduced down to 1 to 20 millibar in the state of hermetically closing the room 1. All the walls of the rooms are then heated to a temp. higher by about 1 to, 10 deg.C than the desired temp. The steam is introduced into the room 1 to a pressure of 150 to 3,000 millibar for 10 seconds to 30 minutes according to the depth at which the articles are hated. Vacuum of 7 to 25 millibar is then restored in the room 1. The room 1 and the heaters 2 are communicated by opening valves 11, 16 and the steam is adsorbed by an adsorbent 8. The water heated by a barrier type heat exchanger 13 to heat the articles for 1 to 10 hours and thereafter, the atm. pressure is restore in the room 1 dehydrated articles are taken out.
