Abstract:
PURPOSE: To obtain a product of a high quality by a simple means by supplying vapor from the upper part of a box body and exhausting it from the lower part, forming a high temperature area of vapor, and a low temperature area thereof in the upper part and the lower part, respectively, moving a food material from the lower part of this free area to the upper part and executing a vapor treatment.
CONSTITUTION: When a tray 2 on which a food material 10 is placed is carried into a vapor chamber 1 by carry-in conveyors 7, 8 and stopped intermittently, a carrying device for allowing the tray 2 to ascend supports the tray 2 and allows it to ascend by one step, and while carrying in and allowing to ascend intermittently and successively, it is carried out to the outside from a carry-out port 4. As for an atmosphere in the vapor chamber 1, since an exhaust port 9 is provided, vapor supplied from a vapor supply port 6 in the upper part moves downward, vapor-heats the foot material 10 and is exhausted from the exhaust port 9, and the inside of the vapor chamber 1 in the lower part than the exhaust port 9 is not filled with high temperature vapor, and becomes a low temperature area. In such a state, the tray 2 is carried into this low temperature area first and vapor-heated at a low temperature, and vapor-heated gradually at high temperature vapor in connection with an ascent by the carrying device.
