To provide a simple method for controlling the mixing of bread dough to finish the mixing in an optimal state, and to provide a device for performing the method.
This method for controlling the mixing of the bread dough, characterized by applying a mixing time until giving the bread dough in an optimal state, the revolution of a mixer, and the average value of the absolute temperatures of the bread dough during the mixing process to Arrhenius' equation (1): tr=(A/r)×exp(B/T) [A and B are each a constant; T is the average value of the absolute temperatures of the bread dough during the mixing process; (tr) is a mixing time until giving an optimal state; (r) is the revolution (rpm) of the mixer] to determine A and B, monitoring the average value of the absolute temperatures of a new mixing bread dough and the revolution of the mixer during the mixing process, calculating a mixing time for giving the optimal state from the Arrhenius' equation (1), and finishing the driving of the mixer in an optimal mixing state; and the device for performing the method.
