Abstract:
PROBLEM TO BE SOLVED: To provide a method and a device for producing a fried confectionery, capable of massively producing the thin and long bar-like traditional Korean confectionery having an excellent quality by shortening the immersion time of the glutinous rice and automatizing a kneading work, a steaming work and a punching work by the use of an extruder especially without relating to weather and air temperature.
SOLUTION: This method for producing a fried confectionery comprises immersing glutinous rice, pulverizing the immersed rice, selectively mixing the rice powder with subsidiary materials, charging the mixture into a feed hopper 2, automatically carrying out kneading and steaming works using an extruder 1, automatically charging carbon dioxide gas into a barrel to perform a punching work for the kneaded and steamed glutinous rice, by the use of a CO2 control panel 20 disposed on one side of the extruder, extruding the treated materials through an extrusion port 6, scattering wheat flour on the surface of the extruded product from a flour-scattering machine on the transfer of the extruded product to a conveyer belt, and simultaneously cutting the extruded product in a constant length with an automatic cutter at the end of the conveyer belt to obtain the short bar-like formed products cut in the constant length.
