Abstract:
PURPOSE: To provide an industrially useful process for dissolving cheese protein by treating cow's milk with an enzyme, separating the produced curd from oil and fat components and dissolving the separated curd in a mixed solvent consisting of an amide solvent or an alkylsulfoxide solvent and an alkali metal halide.
CONSTITUTION: Oil and fat components are removed from curd produced by treating cow's milk with a milk clotting enzyme and the residue is dried. The obtained protein component is dissolved in a solution produced by dissolving 1-30wt.% (preferably 10-20wt.%) of an alkali metal halide (preferably lithium bromide, etc.) in an amide solvent (e.g. N-methylpyrrolidone) and/or an alkylsulfoxide solvent (preferably dimethyl sulfoxide).
