Abstract:
PURPOSE: To provide a method for dissolving chitosan prepared by deacetylating chitin, abundant natural resources, in a high concentration.
CONSTITUTION: Chitosan is dissolved in brewed unpolished rice vinegar in a such a way that a composition ratio of rice red KOJI cultured with a filamentous fungus of the genus Monascus is 5-50wt.% based on common brewing rice KOJI (Aspergillus oryzae) to provide a method for dissolving chitosan.
