Abstract:
To provide a drying method which is suitable for long term preservation of food having a thickness of 5 mm or less without destroying its cells while effectively maintaining its color, taste, and flavor, and enables seeds to germinate and to grow under an inappropriate temperature/humidity condition, and a device therefor.SOLUTION: The drying method according to the present invention, comprises a step of placing food or seeds treated with silicon-containing water in a vacuum tank, and a step of repeating, by a thermostat, heating the food to an optimum temperature of from 40 to 80°C or heating the seeds to an optimum temperature of from 40 to 60°C measured by a thermocouple by using an infrared heating device and concurrently decompressing the vacuum tank down to a pressure lower than the boiling pressure of water of the optimum temperature to introduce air of a temperature of -1 to 15°C and a relative humidity of not higher than 20% RH thereinto to cool the food or the seeds down to a temperature to start reheating. The drying device causes moisture to permeate from inside of the food to outer cells thereof and causes water vapor to diffuse from the surface of the food into the vacuum tank to dry the food to make its water activity 0.6 or lower.SELECTED DRAWING: Figure 1
