PURPOSE: To enable the uniform and quick drying of the pulp of date, without forming scorch, by removing the stone from a date in the presence of water to obtain a wet paste of date pulp, dehydrating the pulp to a specific water content, pelletizing to pellets having a diameter falling within a specific range and drying the pellets with hot air stream.

CONSTITUTION: The stone is separated and removed from a date in the presence of water, and the obtained wet paste of date pulp is put into a cloth bag, pressed to decrease the water-content to ≤70%, and pressed against a net to form pellets having diameter of 3W10mm. The pellets are heaped and hot air is passed through the heap to effect drying of the pellets.
