PURPOSE: To enable the drying of the pulp of date, without forming scorch, by dehydrating a wet paste of date pulp in a cloth bag, pressing the dehydrated pulp against a net to form pellets and drying the pellets with a drier while gradually decreasing the humidity in the drier.

CONSTITUTION: The pulp of date is put into a cloth bag, dehydrated to a water- content of ≤70% by compression and pressed against a net to form pellets having diameter of 3W10mm. The pellets are heaped in a drier and dried with hot air passing through the gap between the pellets. In the middle of drying process, the air in the drier is exchanged with the outer air to keep the humidity in the drier to ≥50% and the drying is continued until the pellet is dried completely to the core.
