To provide a method for eliminating unfavorable smell-causing components and bitter taste components which a quillai extract contains, and a method for producing quillai extract from which the unfavorable smell-causing components and the bitter taste components are eliminated: and to provide quillai extract from which the unfavorable smell-causing components and the bitter taste components are eliminated.
The method for eliminating unfavorable smell-causing components and bitter taste components comprises making quillai extract solution obtained by dissolving the quillai extract in water or a mixed solvent prepared by mixing ≤40 pts.mass of lower fatty acid alcohol to 10 pts.mass of water contact to porous adsorbing resin having 30-120 of a modal diameter of its small pore. Collecting the quillai extract from the quillai extracted solution after such a treatment results in producing the quillai extract which significantly contains quillai saponin and from which unfavorable smell-causing components and bitter taste components are eliminated.
