To provide a novel method for determining the degree of ripeness of a food product.SOLUTION: A method for evaluating the ripeness of a food product includes the steps for preparing a section of a food product including a central part (12) and a peripheral part (14), acquiring an imaging image of a flavor component included in the section by imaging mass spectrometry, and determining the degree of ripeness of the food product on the basis of a comparison of the signal intensity of the central part (12) and the signal intensity of the peripheral part (14) in the acquired imaging image, and a predetermined reference value.SELECTED DRAWING: Figure 1
