To provide a method for extracting and refining saps of trees, bamboos, etc., without decomposing various kinds of effective ingredients contained in the saps or breaking the saps by heat polycondensation, etc.

The method for extracting and refining the sap comprises immersing a tree into water, heating the solution at 105C to 120C while adding pressure thereto and directly distilling and collecting vapor in which the sap is extracted by using a distiller. According to the present invention, lignin and intracellular contents can be extracted without causing decomposition and heat polycondensation by continuously extracting the lignin and the intracellular contents in warm water under pressure at 105C to 120C.
