Abstract:

To provide a method for fractionating lard at a low cost which can effectively fractionate OPO contained in lard into a crystalline portion and give a crystalline portion serviceable as solid fat such as margarine and the like though containing a high proportion of OPO.

The method for fractionating lard comprises mixing oil and fat mainly composed of a triglyceride represented by the formula: SOS (wherein S is a 16C or higher saturated fatty acid and O is oleic acid) with a lard soft oil thereby fractionating into a crystalline portion and a liquid portion.
