Abstract:

PROBLEM TO BE SOLVED: To provide a method for heat-treating a solid food, capable of supplying a solid material to be treated with a fixed temperature in a uniform temperature distribution.
SOLUTION: This solid material to be treated is provided with a temperature by a process for bringing a thermally conductive material having a fluid body in it and a flexible skin through the skin into contact with the solid food. The fluid body is selected as a medium for heating or cooling and the flexible skin is selected to attain the subject.
