Abstract:

To provide a method for providing a microbial concentrate directly separated from a food product without increasing a microorganism for a matrix assisted laser desorption/ionization flight time type mass spectrometry in order to quickly and highly accurately perform identification analysis of microbial species in the food product.

A precipitate obtained by centrifugal separation of a liquid food sample, a filtrate obtained by separating a suspension of the precipitate through a microporous membrane or a filtrate obtained by separating the food sample dispersed into a liquid substance or a liquid through the microporous membrane, or a precipitate obtained by performing isoelectric point precipitation of a protein component derived from food and then separating a filtrate part passed through the microporous membrane by centrifugal separation method is provided as a microbial concentrate for identification analysis of the matrix assisted laser separation/ionization flight time type mass spectrometry.
