Abstract:

To provide a method for improving color of salmon flesh by which salmon having moderate red-orange color similar to that of natural salmon is produced; and to provide flesh color-improving feed, salmon produced by the method for improving color of salmon flesh and flesh of the salmon.

The method for improving color of salmon flesh comprises the step of raising salmon with feed to which a carotenoid coloring material containing at least astaxanthin, phoenicoxanthin, canthaxanthin and adonixanthin is admixed, so as to produce salmon having moderate red-orange color flesh.
