Abstract:

PROBLEM TO BE SOLVED: To improve meat quality of beef cattle and to increase the grade of its marbling of fat (BMS, so-called beef streaked with fine veins of fat).
SOLUTION: Vitamin C (L-ascorbic acid) is administered to beef cattle. Administration of vitamin C may be carried out by injection, etc., but oral administration is most simple. However, in the case of oral administration of only vitamin C, it is decomposed by microorganisms in a rumen, and the desired effect cannot be obtained. Consequently, coating of vitamin C with some substance is required so that the vitamin C is passed through stomachs and absorbed in an intestine. Hardened oils and fats of soybean are preferable as the coating agent. The dose is properly about 20 mg/kg weight/day-60 mg/kg weight/day calculated as vitamin C. As the result of Japanese Black, with regard to meat yield, a significant difference is not recognized between an administration group/non- administration group but with regard to meat quality, significant differences appear in marbling of fat (beef streaked with fine veins of fat), gloss, firmness and texture.
