Abstract:

PURPOSE: To efficiently improve the milk flavor of a powdered milk product such as skim milk to a degree comparable to that of raw milk by adding a specified amount of an yeast autodigestive liquor to said product to remove its odor.

CONSTITUTION: The flavor of a powdered milk product can be improved by adding 0.05-2 (pref. 0.1-1)wt.% of an yeast autodigestive liquor to said product such as skim milk.
