Abstract:

PURPOSE: To reduce an unstable melting point phenomenon and to obtain hard butter having improved qualities such as tempering properties, etc., by adding fats and oils having a specific composition to a hard butter.

CONSTITUTION: Hard buffer rich in 2-oleo-1,3-dipalmitin and/or 2-oleo-1,3- distearin component, having low iodine value, is blended with a plant seed (kernel) oil of Pentadesma of the family Guttiferae or of the genus Allanblackia containing ≥20wt% 1-stearo-2,3-diolein and ≤2.0wt%, preferably ≤1.0wt% 2-linol-1,3-distearin.
