Abstract:

PURPOSE: To obtain high quality sweet taste having moderately balanced refreshness and substance, by adding a specific amount of sucrose to an inverted liquid sugar, and adding a stevia sweetener to the mixture in a specific ratio to the sucrose.

CONSTITUTION: The sweet taste of an inverted liquid sugar containing 15W40wt% of sucrose can be improved by adding 0.1W0.8wt%, as total stevioside based on the sucrose, of a stevia sweetener containing 100pts.wt. of stevioside and 10W70pts.wt. of rebaudioside A. A high quality sweet taste having moderately balanced refreshness and substance can be obtained by defining the amount of sucrose in the composition, and adding a stevia sweetener within the above range.
