Abstract:

To provide a method for lowering viscosity of polysaccharide, a viscosity-lowering agent and a polysaccharide lowered in viscosity.

This method for lowering viscosity of polysaccharide of mannose chain, polysaccharide of glucose chain or polysaccharide of xylan chain is performed by adding an intermediate decomposition product of starch such as dextrin, malt dextrin or powdered taffy to the polysaccharide.
