Abstract:

PURPOSE: To efficiently prevent a flavor from vaporizing and maintain and improve the flavor of a food and drink excellent in safety by adding a whey protein, etc., to the food and drink.
CONSTITUTION: A whey protein, its concentrate and/or a derived substance such as the separated whey protein and/or a treated substance thereof in an amount of preferably 0.01-10wt.% are added to a food and drink to maintain and improve the flavor thereof.
